Here is my kit list for a camping trip. The only difference between packing for a 2 day trip and a week long trip is the amount of food needed. I generally reckon on collecting drinking water along the way, so don't usually carry more than I need for 24hrs.
Things for overnights: Tent, sleeping bag, sleeping mat, toiletry bag, toilet kit (trowel, paper, lighter, hand gel), shoes.
Clothing: 3 complete sets of clothing, one on and two packed. All clothing is suitable for use under paddling waterproofs and on land. Warm coat, warm hats (several), sun hat.
Eating: Stove (gas trangia), gas cylinders, food (lunches packed separately from breakfast/dinner things), mug, sporks, coffee press, tarp and poles.
Navigating: Maps, handheld compass, deck mounted compass, phone with mapping software, GPS.
Communication: VHF, PLB, phone in waterproof case, LED flare, whistle.
Safety: First aid kit, repair kit (for tent and boat), spare hatch covers, throw line, storm cag, spare paddle, tow line, knife, pump.
Odds and ends: Phone charger, book, notepad and pencil, midge hood, torch, camera, wallet.

Kit that lives in my buoyancy aid pocket. Radio, PLB, camera, compass, electrical tape, lipsalve, (also knife and whistle, not pictured). Items are tied on, and camera also has a floating strap.

Kit that is carried on the deck of the boat. Spare paddle (using Reed paddle holder), contact tow device, pump, maps, deck mounted compass (I use a compass that attaches with elastic so I can move it from boat to boat)

Kit that I carry in the front hatch. Sleeping mat (yellow drybag almost out of the picture), Sleeping bag (dark green drybag), food and mug, clothes (bright green drybag), coat and odds and ends (smaller bright green drybag).

Kit that I carry in the day hatch. Repair kit (plastic box), first aid kit (big red dry bag), storm cag (yellow drybag), spare hatch covers (small red drybag), toiletries (blue) and throw line (last thing packed so it's always on the top).

Kit that I carry in the stern hatch​. Tent outer (purple), tent inner wrapped in footprint (grey), gas cylinders, stove, tarp, ikea bags, tarp poles and tent poles. Shoes also go in the rear hatch but I was wearing them when I took the photos.

What would we do without Ikea bags? When I pack the gear in the car or carry it up and down a beach during the trip, I pack an Ikea bag for the front and rear hatches and a supermarket bag for the day hatch. The same things always go in the same places in the boat. I carry water in flexible water bags which fit in the cockpit behind the seat.
